So if you follow my Pinterest, you will see how food obsessed I am and I keep saying I want to make everything I pin, but I can never find the time for anything #springbreakcomesooner.
My second semester at FIT has been so tough; partially because the classes are harder and also because of my crappy schedule. I should be writing my 6 page Mass Communications paper, but…. bloggin’ calls.
So today, I actually made real breakfast for myself (not counting frozen pancakes from Trader Joe’s that I eat everyday #MomIDidIt) and it’s from my pin board( Potato Omelette Breakfast Bites) 1. I can’t even tell you how EASY this was to make and 2. I don’t know why I haven’t made these sooner.

What you need:
•Eggs (4 eggs is enough for about 5 omelette bites)
•Tater Tots (Mine are from Trader Joe’s in the frozen section)
•Anything else you want to mix into the omelette mix (onion, spinach, etc. I used mixed shredded cheese and onion)
Step 1. Pre-heat oven to 350˙ While the oven is preheating, take about 2-3 tater tots and place those at the bottom of your muffin tin. Start whisking your eggs (add salt to taste). I made 5 omelette bites and used 4 large eggs.
Step 2: Chop up the ingredients you plan on using and sprinkle them over the tater tots. (If you are adding cheese, wait until you pour in the eggs then toss some cheese on top).
Step 3: Pour in the whisked eggs (If you are adding cheese, now you place the cheese on top). Don’t over pour because the mixture does puff up!
Step 4: Put into the oven for about 20 minutes (until you see it is ready).
Tik tok, tik tok….
Step 5: I took a spoon and slowly pushed the spoon under the sides of it (to get it to unstick from the side) and then scooped the omelette bites from the bottom.
Step 6: Enjoy your delicious, totally worth the calories, breakfast!
